To prepare and cook green asparagus


1. Break the tip of the stem with the asparagus, discard it and rinse the asparagus in cold water. Gently peel the hard skin from the middle of the stem down with a thrifty knife.

2. Trim the small leaves at the tip with the tip of a small knife. (If you only want to keep the asparagus tips, trim them now).

3. Tie the asparagus in small bunches.

4. Bring a saucepan of salt water to the boil and immerse the asparagus for 3 to 6 minutes (depending on size) until soft and tender.
