A large egg contains 190 mg of cholesterol. We recommend eating a maximum of 300 mg per day of dietary cholesterol to prevent heart disease.
This means that if you eat two eggs a day, you are already well over the limit, including abstaining from any other source of cholesterol ( andouillettes, sausage, liver, butter, mayonnaise, seafood).
A Dismal Reputation
Egg yolks have a dismal reputation in doctors' offices and hospitals. In August 2012, a global media campaign even spread the idea that egg yolk was almost as harmful as cigarettes!
No surprise, under these conditions, that this delicious food is now repelled with horror by the majority of people seeking to maintain good health.
I have not yet seen in France but, in the United States, all restaurants offer, for payment of a supplement, Omelettes without egg yolk, made from white only. I have obviously not tried but judged by the appearance, it looks very bad.
Fight Against Racism Anti-Yellow
Because I consider for myself that all these slanders against the egg yolk are scandalous. Of all animal products, the egg is the one that is most naturally made to be consumed. Eating does not harm the animal that laid it. You do not even have to milk it.
Egg Yolk excellent for health
High consumption of egg yolks reduces the risk of hemorrhagic stroke by 25%. This is a new study published in the British Medical Journal, based on data collected from 4 million people, which is huge. These results can, therefore, be considered very reliable.
Egg yolk is the richest choline food, containing 125 mg. Choline is an essential nutrient of critical importance for the formation of the brain of infants, but also necessary for the maintenance of brain function in adulthood.
Choline slows down the progression of Alzheimer's disease and dementia. It is the precursor of acetylcholine, a neurotransmitter that plays a particularly important role in muscle control and memory. Recently, psychiatrist researchers at the University of Colorado in the United States have even shown that choline supplementation in pregnant women could help reduce the child's risk of developing schizophrenia, a serious psychiatric illness for which he is ill. There is no cure! It is also used for the synthesis of lecithin (or phosphatidylcholine), an essential constituent of cell membranes and a component of bile that favors digestion of lipids. Your brain needs 500 mg of choline every day.
The egg yolk also contains lutein, which helps reduce the risk of macular degeneration, the leading cause of blindness in French over 65 years. Luetin is an antioxidant that appears to block or reduce the damaging effects of free radicals in different parts of the body. Free radicals can be involved in a large number of chronic diseases. Lutein in egg yolks is also better absorbed than green leafy vegetables.
Another contribution of the egg yolk, more unknown, is to improve the sports performances:
According to many experts like Julien Venison, author of "Nutrition Force" or Michael Gundill, author of "Guide dietary supplements for athletes", a high cholesterol diet can accelerate the gains in strength and muscle mass in the part of a physical training: our body uses cholesterol to repair the muscle fiber lesions resulting from a workout, which speeds up recovery and therefore progression. These observations also explain why anti-cholesterol drugs, statins, have the side effect of decreasing muscle strength and aches: lack of cholesterol weakens your muscles!
They Falsely Claim That
dietary cholesterol increases blood cholesterol levels. To a very large extent, this is false, because the cholesterol in the blood is manufactured mainly by the liver;
cholesterol is the cause of heart disease. This is also false, more and more voices finally recognize openly, although this open secret has been known for decades in informed circles of natural health. The only downside that I want to bring, and it is important, is that it is very important to choose good quality eggs. Always eat, if possible, hen eggs raised in the open air and fed with organic foods, including flaxseed.
When breeding is organic, hens can feed on bugs in the wild (worms, etc.) that can be a source of omega-3. It is also likely that, like the man, a hen that has a little more physical activity naturally produces more long-chain omega-3 fatty acids than sick hens locked up in a shed.
Finally, flaxseed, rich in omega-3, is better digested by the stomachs of chickens than by that of men. Omega-3s are found in organic egg yolk, then in your body.
So do not scruple to eat omelets, scrambled eggs, fried eggs without forgetting, of course, my favorite, the boiled egg.
