What nutrients are found in green beans?
Green beans are distinguished from the average of other vegetables by a lower content of carbohydrates (3 g / 100 g), lipids (0.17 g / 100 g) and protein (2 g / 100 g). On the other hand, with 4 g of fiber / 100 g, it is richer in fibers than the others.
Fiber is important for digestive health and the prevention of cardiovascular disease. They also participate in the control of weight and blood sugar.
Side vitamins, it is especially for its folates (vitamin B9) and its vitamin C that the green bean is distinguished, even if the quantities are not exceptional. It is a source of iron for the man and magnesium for the woman (the needs being different according to the sex).
There are relatively few studies on the health benefits of green beans per se, but the ones that exist are mostly oriented towards cancer and bone health. Let's see this now in more detail.
Green Beans For Cancer?
According to a Chinese study, heavy consumption (1-2 times a week) of cruciferous vegetables but also of green beans is associated with a lower risk of stomach and esophageal cancer . Another Chinese study, from 2016, showed that an aqueous extract of green beans had antioxidant and antiproliferative actions on cancer cells of the liver. These effects are mainly due to flavonoids (antioxidant polyphenols) and triterpenoids (the compounds of the plant responsible in particular for its aromatic qualities).
Green Beans For Strong Bones
In rats, green beans appear to play an important role in bone health. Indeed, a Swiss study has shown that it can inhibit bone resorption (when the bone resorbs faster than it is renewed, it becomes fragile). Another study in rats with ovaries removed to induce osteopenia showed that green beans improved bone density. Results to confirm in humans but which already encourage to increase its consumption of green beans in case of bone fragility.
Green Beans Vegetable or legume?
The bean that is eaten whole (pod and seeds) is considered and prepared as a vegetable. Dried seeds of beans (white beans, red beans, black beans, etc.) are legumes, making them one of the best sources of vegetable protein.
